Yesterday afternoon I decided to make some Peppermint Creams, nothing like a little peppermint something with a cup of tea. I thought you might like to have the recipe for them, you may of course have your own variation of these little traybakes and maybe you even use this one but for those of you who don’t, here we go.
Firstly line a swiss roll tin with baking parchment.
In a bowl cream together:-
4 oz margarine
4 oz sugar
then add,
4 oz plain flour
half teaspoon baking powder
2 oz cocoa powder
4 oz coconut
Now I use a food processor and I put all the above ingredients in at the one time and whizz them all together until well mixed but if you’re not using a food processor then use the above method.
When it’s all mixed then press it into the swiss roll tin and bake at 160 deg C (fan oven) for about 10 minutes. Please keep an eye on it as all ovens vary. When it is ready leave aside until it is completely cooled.
In a bowl mix together:-
4 oz icing sugar
2 oz butter
then add some peppermint flavouring to your own taste.
You can then add some green food colouring if you wish. I think it’s a psychological thing, that if the cream is green it makes it seem more like mint. If you have young children you may wish to leave the colouring out, I added it as I need all the E-numbers I can get these days!! 😉
Spread the peppermint cream over the cooked base.
Next melt 9 oz dark chocolate, you can of course use whatever type of chocolate you wish but I think dark goes well with mint.
Pour the chocolate over the cream. (Don’t you just want to stick your finger into that chocolate!)
Then put it in the fridge to set firm.
When set cut into squares and enjoy! 🙂
Well the weekend is almost upon us again and I’ve a bit of a mixed bag this weekend. On Friday night we’re going to watch my son’s band perform, they are headlining a local festival, fingers crossed for a dry and sunny evening. My days of rolling around in the mud ‘Glastonbury style’ are long gone!! Then on Saturday I’m going to another Debbie Abrahams knitting workshop. I’m not sure what I’m knitting but it’s title is ‘Strawberries and Cream’, perhaps trying to get us in the mood for Wimbledon (come on Andy Murray)! As both events are in the same neck of the woods, we are staying the night in a lovely hotel, so looking forward to that. So a bit of Rock & Roll and a bit of knitting, they do say variety is the spice of life!!
I’m going to leave with another little purchase I’ve made from Mia’s lovely shop. I find her creations very hard to resist especially when there are rabbits involved!
Have a great weekend whatever you get up to and thanks as always for dropping in to see me. 🙂

Hi Viv. It’s a bit quiet on the blogging front isn’t it? I just may have to force myself to make those lovely peppermint creams for the weekend! sounds as though you have a fun weekend lined up. I hope the weather stays dry for you. Lovely purchase from Mia! Thank you for your encouraging comment (as always) on my blog. x

Oh Viv, you made me drool 🙂 that peppermint (one of my favorite tastes!) cream looks so wonderful, and I wish you can enjoy it in a sunny garden! It shines here now, wishing both of us sunny weekend!
Yours,
Mia
P.S. I am so happy you liked your little bunny – it’s just so “you” dear friend!
Ooooohhhh I’m drooling – peppermint has that effect on me. That and pickled onions!
Nina 🙂 xxx
Yummy! I’m of a mind just to make myself a bowl of the Peppermint Cream, no need for the base or chocolate covering – oink, oink!
I’m loving your new little rabbit from Mia – I’m probably gonna have to purchase another Moomin key fob as Violet has well and truly dabbed mine. At first she thought it was a hippo, but after countless hours watching episodes of The Moomins from the early 80’s, I’m slowly educating her :0)
Your weekend sounds fab – have fun, and I’ll keep my fingers crossed that the rain stays away.

The workshop sounds like fun – I knitted one of her bags once. I love your purchase, but I have to say that rabbits are not in my good books at the moment – I have just seen two in the garden eating my lovely pink roses! Why can’t they just stick to grass – it has plenty of flowers in, too …

Oh my goodness those peppermint creams look absolutely gorgeous!! You are so good at finding the most tempting sweet things that I love! A friend of mine has just made a tea cosy from a pattern called Strawberries and Cream – it is really beautiful and I’d love one like it. I love your sweet bunny from Mia – it certainly came to the right home! Have a happy weekend, and enjoy the knitting and the music.

Vivienne thanks for sharing your recipe, it looks great and I think a peppermint treat would be good for my sore throat so when I get back out shopping I must get peppermint essence. Not baked anything green or pepperminty for years and this looks a fun yet sophisticated tray bake.
Wow you’ve got an interesting weekend, have a super time at the concert and knitting, don’t take your knitting to the concert!!

Happy weekend sweetie!
Thanks for the recipe, I’m very tempted to make some even though I’m on a mission to loose the baby weight (with the shock of my youngest ‘baby’ turing 4 recently). Love everything Mia makes so I understand completely, she is a great designer and maker. Bethx
